Mastiha is a sweet Greek-style liqueur made from the dried sap of a specific species of pistaccio tree grown on the island of Chios in the Agean Sea. It is one of the most ancient flavors that we know people enjoyed, dating back at least 5000 years. It is difficult to describe its soft, mildly resiny, sugary, savory flavors. Then we wooden pot distill it twice, adding to the complexity, subtlety and mystery of this ancient flavor. Absolutely delicious!
