For our Blanche we use the same botanical formula as our Verte, but utilize a steam injection wooden pot still. Because wood is less reactive than copper or tin, we can attain a highly nuanced character in the absinthe. It’s quite a striking, like a cloud of well defined flavors. Any coloring with herbs would harm this beautiful effect, so we left it as a Blanche. Enjoy!
